Snickery Slice – Vegan/Gluten Free and Low FODMAP

Between the thousands of recipes that can be found online and the ready made selection that can be found in local cafes and supermarkets, there really is no excuse to not be eating clean treats over processed pre-packaged ones. Vegan, refined sugar free, dairy free, nut free, gluten free, if you have a sensitivity or allergy, or trying to make healthier choices, you can be certain there’s a clean version of your favourite treat out there waiting for you to consume.

Things like dates, nuts, coconut oil and maple or rice malt syrup are staples in my pantry as I love to create (and consume) clean and healthy versions of my favourite chocolate bars and treats. This Snickery Slice was originally going to be a caramel slice but after being unable to find any almond butter at my local supermarket (and too lazy to look elsewhere) I decided to roll with the peanut butter I already had in the pantry. The result, pure gooey, snickery, goodness.

My motivation behind this recipe was to create something that didn’t contain any dates. A recent trip to the doctors resulted in being told that I should try to stick to a low FODMAP diet to reduce sensitivities. I won’t get into “FODMAP’s” in this post but will say that I was devastated to find out that my go to clean treat ingredient, dates, were on my “no no” list. *Cue 4 year old like tantrum*

Happy to report that these were a massive success, however the date free protein balls….not so much.

So go get messy in the kitchen, use every spoon, bowl, pot and dish and make something your taste buds and body will thank you for (and don’t forget to tag me, I’d love to see your creations or the resulting mess, either way).

SNICKERY SLICE

Coconut Base Layer

1 Cup coconut flour

1/2 Cup pure maple syrup or rice malt syrup

1/2 Cup coconut oil, melted

1 Tsp vanilla extract

Mix all ingredients together in a bowl. Once combined press mixture into a dish lined with baking paper (make sure to leave yourself enough paper for easy removal) and place in the freezer to chill.

*If mixture isn’t quite sticking together just add a little more coconut oil or syrup.

Snickery Layer

1/4 Cup coconut oil

1/4 Cup pure maple syrup or rice malt syrup

1/4 Cup natural peanut butter

1 Tsp vanilla extract

On low heat melt together all ingredients. Leave to cool slightly before pouring over your base layer then placing back in the freezer.

*Want a really thick middle layer? Double the above ingredients for double the snickery goodness. 

*Like a little crunch? After pouring your snickery layer onto the base scatter in some peanuts and press into mixture. 

The Chocolatey Goodness

1/3 Cup coconut oil

2 Tbs maple syrup or rice malt syrup

2 Tbs chocolate protein powder (Optional) (I use Tropeaka Lean Protein – Chocolate)

2 Tbs cacao powder

On low heat melt together coconut oil and maple or rice malt syrup. Take off heat and stir in protein and cacao powder. Pour over snickery layer and place back in the freezer to set.

Once set slice and store in air tight container in the freezer. Remove from freezer a few minutes before consuming for the gooey snickery goodness!!
